  2. Heat the vegetable oil over medium-high heat. Sauté shallots until fragrant.
  3. Add ground spices and lime kaffir leaves. Keep stirring until the ground spices change color.
  4. Add salt, coconut sugar, and pepper.
  5. Add fried potatoes and fried eggs. Mix well.
  6. Serve with yellow rice or white rice!😋
