After marinating the beef, it is lightly dusted with corn starch and then deep fried for a minute or two. When you are done frying the beef, you can then make the sweet and sticky sauce in a small pot. As soon as the sauce is ready, add the beef. To get the beef extra crispy, you will need to coat the beef twice (after it has marinated).

  1. Take 350 Gr Sirloin Steak - cut into Strips
  2. Take 1/2 cup Potato flour or can use Corn flour (not as good)
  3. Get 1/2 onion - finely chopped
  4. Take 1 large Clove Garlic
  5. Make ready few slices of fresh Ginger - I use about 5-6 thin slices
  6. Make ready 2 Tsp light soy or 1 Tsp Dark with 1 Tsp Water
  7. Prepare For the Sauce:-
  8. Make ready 1/2 Cup Honey
  9. Get 2 Tbls Light Soy
  10. Get 3 Tbls Water (more or less depending HOW sticky you want)
  11. Take 2 Tsp Hoisin Sauce
  12. Take 1 Tsp Rice Vinegar
  13. Get 2 Tsp Sesame Seed oil
  14. Take 2 Tsp shaoxing cooking wine (Optional)
  15. Get 3 Tsp Corn Flour - mixed into Paste

Light soy sauce (reduced sodium) Sweet and Sticky Sauce: Take half the beef strips and toss them with the corn flour. Then carefully add the beef strips into the hot oil. Drain on paper towel and repeat with the remaining beef and corn flour. Thin slices of beef that is shallow fried so it's super crispy then tossed in a sticky sauce.

Instructions to make Sticky and Sweet Crispy Beef - WOW:
  1. Slice the steak into 1 cm wide strips and place it in a bowl. (If your steak is more than 1 cm thick
  2. In a food processor, Pulse the onion, garlic, and ginger until it is a paste. You can just grate everything.
  3. Add the marinade and 2 tsp soy sauce to the beef and mix well and marinade it in the fridge for 1 hour (or 20-30 minutes in room temperature) I do over night if want really strong flavours.
  4. Dust the Beef with half of the potato flour and let rest at room temp for 10 mins. Heat oil in pan until medium hot (about 190c).Then dust with the 2nd lot of potato flour and fry in batches. - the beef should sizzle the second it hits to oil. This should take 2 mins. Dry off on Kitchen Paper. Then Add back for 1 more min for 2nd fry to make extra crispy.
  5. For the Sauce. Add all apart from Corn Flour to a pan. And cook on a medium heat until well combined. Add the Corn Starch Slurry and stir into sauce until thick and sticky.
  6. Remove from heat and add in the beef and toss around in the sauce. it is ok if not ever piece of beef is coated.
  7. Serve immediately and HOT :)

Drain on paper towel and repeat with the remaining beef and corn flour. Thin slices of beef that is shallow fried so it's super crispy then tossed in a sticky sauce. It's different to what we know as Mongolian Lamb which is not fried or crispy, and the sauce is not as sweet. It's the combination of crispy and sticky that makes Mongolian Beef SO good.
