  1. Cut the asparagus into 3 cm lengths, and soak in water for about 5 minutes. Or you can microwave it. Slice the beef into 2 cm widths.
  2. Marinade the beef in Step 1 for about 10 minutes with the (A) seasonings. Sauté the asparagus in a heated frying pan with sesame oil.
  3. You want to keep some crunchiness of the asparagus, so avoid overcooking. Add 1 tablespoonful of Shaoxing wine and a pinch of salt. Take out the asparagus on a plate and set it aside.
  4. Sauté the beef in sesame oil. When the beef changes colour, return the asparagus into the pan. Add the (B) seasoning ingredients, salt and pepper to taste.
  5. I always use Shaoxing wine when I make Chinese dishes.
