  1. Heat up the oven for 200C. Grease the tart tin and line it with the pastry. Pierce the bottom with a fork in several places. Put some baking paper on the top and baking beans.
  2. Bake it for about 15 min with the beans in and for another 5 without so the pastry crisp up a little.
  3. Meanwhile sauté the onion and garlic on butter and add the spinach, salt and pepper, until the spinach wilts. Remove from heat, transfers it to a sieve and let the juice drain.
  4. Put the spinach of the bottom of the tart evenly, add the grated cheese on top, crumble the feta and the goat cheese over.
  5. Whisk the eggs and cream together with the thyme leaves and pour the mixture over the tart.
  6. Bake it for about 30-40 minutes until set and golden on 180C. When ready set it aside for 10 minutes before cut into it. Enjoy 😊
