Instructions to make Malai kofta recipe:
FIRSTLYWEHAVETOPREPAREKOFTA(BALLS) Grate paneer and boiled potatoes in a bowl. Mix them well then add salt(acc to taste),Kashmiri red chilli powder -1/4 tsp,Catch garam Masala, all-purpose flour (maida) -2tsp.Mix them well then try to make one ball from the dough,if the dough is too soft then add 1 tsp all-purpose flour(maida) more. Now we can make KOFTA balls from this dough. Take a small portion of a mixture and roll it into a small ball.
Then press inside with the thumbs to make bowl shape,stuff little dry fruits inside,then seal the edge and roll it into ball,then dust the ball with little maida. Make all the balls in the same way from the mixture.
To fry the balls Heat oil with pan.Once the oil is heated,reduce the flame to low -medium. Put 3 -4 balls at a time,keep flipping. Fry it on a low -medium flame till it turns golden brown. Taken it out in a plate. Kofta balls are ready now.
MASALAPASTEPREPARATION Heat the pan,add butter.Once the butter has melted,reduce the flame to low.Add few cashews and almonds to the pan, fry it for few seconds,then add ginger,garlic,green chilli,and chopped onion to the pan. Fry all the ingredients at medium flame.Now add Chopped tomato. Fry the tomato on medium flame till it turns soft (2-3 minutes).
You can add some salt (optional). Turn off the flame and let it cool down. Take it out in a blending jar. Blend the mixture without adding any water. Make a thick paste of the fried ingredients. Then take it out in a bowl.
CURRYPREPARATION Turn on the flame,heat a pan. Add dry fenugreek leaves and roast it for few seconds on low flame. Take it out the roasted kasuri methi in a plate and keep it aside. In same pan, now add 2 tsp oil. Let the oil heated,reduce the flame to low. Add turmeric powder,red chilli powder,coriander powder and cumin powder in the hot oil. Mix it and cook the masala for a minute on low flame. Now add the prepared masala paste to the pan,keep stirring.
Fry the masala 2 -3 minutes on low flame, keep stirring in between. Now increase the flame to medium and cook it for a minute,keep stirring. Masala is ready. Add 1/2 glass water,stir it. Add 1/2 glass water more. Add little water again if the gravy is too thick,stir it. Add salt to taste. Mix it. Cook it 2 -3 minutes on low -medium flame. Now add fresh cream. Mix it well. Now add CATCHGRAMMASALAPOWDER.Addroasteddryfenugreek leaves. Turn off the flame. Stir it.
