The ingredients needed to make Mole:
  1. Make ready 1 C almonds
  2. Prepare 4 C beef stock
  3. Prepare 2 jalapeños; small dice

  6. Make ready 1 C tomato puree
  7. Take 2 t cumin
  8. Take 2 1/2 oz dark chocolate with guajillo pepper
  9. Prepare 2 1/2 oz dark chocolate with chipotle pepper
  10. Make ready 1/2 C raisins
  11. Make ready 1/4 C honey
  12. Prepare 1/4 C brown sugar
  13. Take 1 lime; juiced
  14. Take vegetable oil; as needed
  15. Get kosher salt and black pepper; as needed
Instructions to make Mole:
  1. Pulse almonds finely in a food processor.
  2. Heat enough vegetable oil in a large sauce pot to cover the bottom. Add shallots and jalapeños. Saute 1-2 minutes.
  3. Turn heat down to medium-low. Add garlic. Sweat until garlic is fragrant, about 1 minute. Add to almonds in food processor.
  4. Add 1 C beef stock. Pulse to combine. Pour almond mixture into saucepot.
  5. Add remaining beef stock and tomato puree. Simmer 25-30 minutes.
  6. Chop chocolate finely and add to saucepot with raisins, lime juice, and honey. Simmer 10 minutes.
