Preheat oven to 170C
In a large bowl combine all dry ingredients.
In another bowl, melt coconut oil and honey. Heat till coconut oil is runny. Add vanilla then pour over the dry ingredients. Mix thoroughly. Hands are good!
Spread granola on baking trays lined with silicone paper. Not too thickly.
Bake for 30 mins stirring at 10 mins and 20 mins. You need to check it often in the last 10 mins…will burn if you're not careful!
Remove from the oven when done…dont stir it! Leave it to cool completely.
Once cool break into chunks…or whatever size you prefer…eat with yoghurt and berries π
