The ingredients needed to make Chicken Quesadillas:
Prepare 2 cups shredded cooked chicken or rotisserie chicken
Make ready 1 cup mayonnaise
Prepare 1 tsp cumin powder

Get 1/2 tsp cayenne pepper powder
Take 1/2 tsp paprika
Get 1/2 tsp hot sauce

Take 8 oz block of cheese (mozarella, cheddar, Mexican), shredded
Instructions to make Chicken Quesadillas:
Combine mayonnaise with all ingredients except chicken and tortillas/chapatis.
Mix chicken with the prepared mayonnaise.
Take chapati and place the chicken mixture on one side of the chapati. Sprinkle cheese liberally.
Fold chapati in half (half moon shaped).
Heat skillet/tawa. Once nicely heated, lower flame to medium. Place the quesadilla on the tawa and with a spatula, keep pressing on it so that the chapati doesn't fluff and gets crisp in the bottom.
Cook for a minute and flip it carefully. Now press this side for the bottom to be crisp for another minute. Lower flame if it's browning quickly.
Serve these with heat sauce on the side.
