  1. Heat oil and saute the ground spices until fragrant and dry. Set aside and allow to cool.
  2. Divide two parts. Combine 1 parts with cassava leaves.
  3. Stuff the mixture into the chicken and secure with toothpick or cooking string.
  4. Rub the chicken and with banana leaves (I use turmeric leaves because I don't have banana leaves) and tie with a string.
  5. Grilled in the oven at medium heat (180 °C) for about 2 - 3 hours or until cooked. Remove from heat and cut before serving.
  6. Note : I steam the chicken first about 45 minutes before grilling in the oven for 2 hours. Happy cooking 😍
