  6. Cover pan with aluminum foil. Put into 350°F oven for 20 to 30 minutes
  7. After 20 to 30 min @ 350, remove pan and remove foil. Ramp up oven to 425°F.
  8. Replace uncovered pan of potatoes and onions into 425 oven. Roast for additional 15 to 20 minutes.
  9. Remove from oven and enjoy!
