  1. Make ready 1 tbsp pure ghee
  2. Get 1/2 cup soaked almonds
  3. Get 1/2 cup milk to make almond paste
  4. Take 1/2 cup warm milk to dissolve saffron
  5. Get 4 cups milk
  6. Prepare 1/2 cup sugar
  7. Get 1/2 tsp cardamom powder
  8. Prepare 1/2 cup malai/cream
Steps to make Almond Saffron Rabdi:
  1. In one bowl, warm 1/2 a cup of milk, and add saffron to it.Keep aside.
  2. Grind almonds with 1/2 cup milk to make a paste.
  3. Add ghee in a thick bottomed pan, and cook almond paste in it,on slow heat for 15-20 minutes.
  4. Keep stirring the paste, so that it does not burn or stick to the bottom.
  5. Once the almonds paste is cooked, add saffron milk.Stir the paste and the milk nicely.
  6. Add rest of the milk, and let it simmer on slow heat for almost 20-30 minutes.
  7. Now add the cream cardamom powder and mix well.
  8. Let it simmer for another 5 minutes.
  9. Add chopped almonds and sugar at last, and bring to a boil.
  10. Turn off the heat.
  11. Put it in a bowl. Garnish with chopped almonds, rose petals pistachios and saffron starnds. Serve hot or chilled
