Steps to make Palmier cookies:
  1. Preheat oven to 400°F
  2. Mix together cinnamon and sugar in a medium bowl
  3. Sprinkle a bit of the cinnamon sugar onto your work surface
  4. Take puff pastry out of the freezer
  5. Roll puff pastry with roller until its about1/8 of an inch thick.
  6. Sprinkle the pastry with most of the remaining cinnamon sugar (save a little!)
  7. Take one long end of the pastry and roll it onto itself until you reach the middle of the pastry (like you're rolling a jelly roll)
  8. Roll the other end until the two meet
  9. Cut the rolled pastry into 1/2 inch segments (so they look kind of like handlebar moustaches)
  10. Roll the segments in the remaining cinnamon sugar
  11. Place on a cookie sheet, with enough room for them to expand
  12. Bake for 6-10 minutes
  13. Allow to cool and enjoy!:)

Ya know…the only decent dessert hanging out at the local Chinese Buffet! (Can someone Please explain this to me? Palmier. (Palm Leaf Cookies, Pig's Ear, Elephant Ear Cookies, French Hearts, Shoe-Soles, Glasses, Schweineohren, Palmeritas, Jalebi, Orejas, Cœur de France, Pastry Hearts). The answer to this cookie conundrum is the palmier, or elephant ear cookie. A simple French classic, and even though it's French don't let that scare you.
