Make th dough with whole wheat flour the usual stiffness.
Roast dry red chilli sesame seeds and Niger seeds together and make a nice powder.
Wash and cut spring onion along with the bulb if small or else only leaves.
Heat two tsp oil in a pan add garlic chilli paste. Cook for two min then add Niger mix seed powder again cook for two more min.
Add the chopped spring onion and salt to taste cook till nice and soft
Roll two thick chapatis of the wheat flour dough. Spread the above masala on one chapati nicely.
Cover it with the other chapati,roll it tightly covering the masala well and now cut small roundels.
Roll these small roundels in thin flat chapati. Use rice flour and besan flour mix to dust it while rolling.
Cook it on low flame on both sides with small amount of oil.
The dusting with besan and rice flour gives these paratha a nice crispy cover.
