  1. Make ready 8 Flour Toritillas
  2. Get 1 can Cream of Mushroom Soup
  3. Prepare 1 lb Ground Beef
  4. Prepare 16 oz Sour Cream
  5. Make ready 1 can Sliced Olives
  6. Prepare 2 cup Shredded Cheddar Cheese
  7. Make ready 1 can Green Enchilada Sauce
Instructions to make Sour Cream Enchiladas:
  1. Preheat oven to 375°.
  2. Brown ground beef in skillet. Drain fat.
  3. Mix ground beef, cream of mushroom soup, sour cream and sliced olives in large mixing bowl.
  4. Coat bottom of baking dish with 1/4 of Enchilada Sauce.
  5. Heat flour tortilla in a skillet until warm and flexible. Scoop about a cup of mixture onto tortilla. Roll tortilla, fold edges and place in baking pan/enchilada sauce. Repeat.
  6. Pour remaining Enchilada Sauce over enchiladas.
  7. Sprinkle Cheese on top of enchiladas.
  8. Cover with foil.
  9. Cook for 40 minutes.
  10. Remove foil and cook for an additional 10 minutes.
